It’s been a long time since I shared a cocktail recipe here on Wishes and Dishes and I think I’m well overdue. My comeback cocktail game is strong here, guys. I am presenting you with this awesome, delicious, and innovative Mermaid Water Rum Punch. Doesn’t just looking at this drink make you so happy? That gorgeous shade of greenish-blue gives me all of the summer feels. I’m trying to make myself seem younger than I am by talking like that. Did it work?

If you enjoy sweet and fruity drinks then this one is for you. I’ve been steering away from the sickly sweet drinks in the past couple of years because my taste buds (and stomach) just cannot seem to handle it anymore. Sorry, my beloved Midori sours.
This drink may SEEM like it would be super sweet (and it is definitely on the sweet side, don’t get me wrong), but the fresh-squeezed lime juice really helps to balance out that sweetness. The fresh lime juice will not only counteract the sweetness, but it really is key to the unique flavor of this Mermaid Water Rum Punch. Don’t skimp on it, por favor.

- 2 oz Captain Morgan Spiced Rum
- 2 oz Coconut Rum
- 6 oz Pineapple Juice
- 1 oz fresh-squeezed Lime Juice
- Blue Curacao
- Top off with Pineapple Juice
- Lime slices or wedges, for garnish
- Mix all ingredients together in a glass pitcher or individual glasses that have been filled with ice cubes and lime slices (optional).
- Top off with extra pineapple juice to fill glasses to the top.
- Add splash of blue curacao to get the nice greenish blue color.
- Add lime wedges or slices, for garnish.
- Note: I used these paper straws and little umbrellas for a pretty presentation.
