So, if any of you have ever lived with your parents as an adult, it dredges up interesting feelings. (My parents are great by the way- and always have been.) But I have started having these crazy anxiety dreams that are totally reflective of when I was first REALLY going out on my own and still desperately leaning on my parents to fix everything.. Like not when I was on my own but still on the dole, you know? Like completely financially independent. Like last nights dream for instance: I moved to another state and got an apartment for the first time, but instead of renting the sensible basement unit that was safe (albeit a little dark), I rented the outdoor unit. Yes, the “open air” unit with three missing walls. Imagine my horror at my stupidity when I came home from wherever I was and realized most of my stuff had been stolen. Not to mention that it had started raining and it was pouring into the “room”. I also had resorted to clutching a can opener in bed in order to protect myself. And who did I call to help me? My dad. Then I woke up in a cold sweat.

Apricot Coconut Prosseco Punch

Fresh tart apricot puree, subtely sweet coconut sorbet and bubbly cold prosecco. Yes and Yes.

Recipe: Apricot Coconut Prosecco Punch


  • ¼ cup apricot puree
  • 2 scoops coconut sorbet
  • 12 ounces chilled prosecco
  • Apricot Puree, makes 2 cups
  • 4 apricots pitted and chopped
  • 1 1/2 cups water
  • ½ cup sugar
  • pinch of salt


  1. Instructions
  2. For the Apricot Puree:
  3. In a small pan, add the Apricot, water, sugar and salt. Cook for 3-5 minutes until thickened. Add to the jar of a blender and puree until smooth. Chill.
  4. Spoon 2 tablespoons of apricot puree into the bottom of each of two cocktail glasses (I used brandy snifters or stemless wine glasses would be great).
  5. Add one scoop of coconut sorbet to each glass.
  6. Top with prosecco and serve immediately.
